Foxtail Millet kesari/Thinai Kesari

Millets contain higher amounts of fiber and minerals than wheat and rice. Moreover, it also contains good quality protein with a high content of essential amino acids. It has low glycemic index and hence it produce lower blood sugar levels than wheat or rice. The presence of magnesium in millet can help to reduce the effects of heart attacks. With all the benefits of millets in mind, I am going to share my sweet recipe using millets with the all new sugar free natura.

I used foxtail millet (also known as thinai, Kavalai, Korai and Kamban Korai in Tamil ) instead of ravai. Kesari is a south Indian dish, which is known as kesari bhath by Kannadigas,  is traditionally  prepared using rava.

Ingredients Required

• Thinai  rice (or)Foxtail millet- 1/2 cup
• Water - 2 cups 
• sugar free natura (low calorie sugar substitute)- 1/2  cup
• Ghee - 2 tablespoons
• Cashew nuts - 1 tablespoon
• Raisins - 1 tablespoon
• powdered Green cardamom 
• kesari powder (orange) & salt - a pinch

Method
1) Dry roast the thinai  rice with ghee in a kadai  and cool down to room temperature.
2) Once cooled, take the thinai rice in a mixture and grind it to a medium coarse powder ( like ravai).
3) Now heat a tablespoon of ghee and roast cashews, raisins till they become golden brown.
4) Take water in a kadai and allow it to boil. Add thinai to the boiling water.
5) Slowly stir thinai in simmer flame till it is well cooked without forming lumps.
6) Add a pinch of keasri powder and salt.
7) Finally add powdered cardamom and sugar free  natura to the mixture.  Stir for few more minutes.
8) Add rasin and cashew at the end and stir it so that it gets mixed well. Allow it to cool.
Delicious kesari is ready.

Anniversary celebration.

Every year I used to celebrate my parents anniversary by greeting them through phone. Its was my parents 60^th anniversary and I wanted to celebrate that anniversary in a special way. While I was talking to my colleague she said that she celebrated her parent’s anniversary by visiting Tirupathi temple and shared her memorable experience. From then on, I planned to celebrate my parent’s 60^th wedding anniversary in a different way. But they have already visited Tirupathi.

My dad once told me that he want to visit an orphanage and want to donate something either in the form of money or food. Suddenly, I felt I should fulfill his wish and got an idea to take them to Mentally challenged school which is near to my house.

I donated dinner in the name of my parents for the children staying in Mentally challenged school on the day of their wedding. My plan is to take them to that place on that special day. On the day of their wedding anniversary as usual I greeted through their phone and informed them that we will be going to that school that evening. My dad was very much happy on hearing this and both my mom and dad was ready by 5.00 PM

Sharp by 5.00, after my office, I went to my parents’ home. I took them to the mentally challenged school. Once we stepped into the school, we observed there were nearly 70 children’s at different age group. When we saw them, we felt our heart was heavy. My dad felt emotional by seeing the children struggling to speak. Some kids could not even respond to our care.

At 7.30 at night the dinner arrived and everybody was assembled in the dining room. The prayer section started five minutes early to the dinner. After prayer we severed dinner to each and every child. When my parents served in every child’s plate, they said ‘thank you’ from the bottom of the heart.

Those words were much pleasing. Every child enjoyed the dinner to the at most happiness. At last after dinner every body gathered in a place and greeted by parents in a sweet lubbay voice that could not be expressed. They said, “Happy Anniversary to you. May god bless you. Long live both of you”

Later, we spoke to the management about the day to day activity of the school. After a while, the childrens went to their room to sleep.

We just donated in the form of food, but in return we got a memorable happiness and joy that money could not give us.

While returning to home, my dad and mom said that they never celebrated their anniversary. They said this was the real happiness. They said, they had a good time while talking to the kid and being together. After that my parents decided to celebrate the anniversary every year with those kids.

My Birthday Gift

My Birthday Gift

Today I wake up little earlier in the morning than the usual time and started preparing breakfast. I have to get my elder son ready to school and my husband was getting ready to college. My husband is a professor in a private institution. Throughout the day my younger son(turning one year old next month) keeps me busy. 

By the time I completed breakfast, I heard a whine of my younger son. I took him from bed and started packing lunch and snacks for my son. 

“Happy birthday mom” My elder son wished me with a card in his hand. With full of surprise I thanked and kissed him for such a sweet surprise.
“You remember my birthday?” I asked him.
“Yes mom. I selected this card for you, while returning from school yesterday”
“So nice of you” I said and started feeding the breakfast.
 “Bye, Bye mom” he rushed to catch his van, when we heard his school van horn sound.

  Now its my husband turn to wish me. He came to dinning and I was eagerly waiting for him to greet, but he did not. As usual he must have completely forgot my birthday.

Every year, be it a anniversary or a birthday we visit a temple that is near by my house. With thoughts fluttering in my mind, I planned to go for temple in the evening.

After having his breakfast, I asked him to be little earlier in the evening thinking that he will ask for the reason. But he said he would try to come earlier and left saying bye to me. I was totally upset and disappointed.  After a while I heard my mobile ringing and I thought it might be my husband. My husband is known to surprise in different ways.

I took my mobile, but again disappointment clouded my emotions. It was my mom at the other end to greet me. I talked to my mom and dad for a while and resumed to expect a call from my husband. Till evening I was eagerly waiting for my husband’s call, but it turned out to be a disappointment day for me.

In the evening he came earlier as I requested in the morning. I asked him to get ready for temple but he said he is waiting for a person. After an hour, a salesman entered my house with a machine. It was a treadmill and he started giving instruction of Do’s and Dont's with the machine to us. My husband made him the payment and the salesman left the house.

After a while my husband said, "Happy birthday my dear, this is my birthday gift to you. I want to surprise you, so I didn’t wish in the morning.”

Since heart is the main part of the body, main fitness lies in the protection of heart. From tomorrow, you have to use this treadmill for walking. I will help you in all the ways”.

Today admission to the engineering course is easy, due to the elimination of entrance exam and more private institutions in our state and parents can easily graduate their children as a professional degree holder. Moreover today we can see at least two engineering graduates in a family. But 15 yrs back, when I am doing my graduate it was not so easy to enter into engineering college. We have to write entrance exam, and based upon the marks scored in the exam the admission to the engineering college would be confirmed. On the other hand if the mark scored is low we have to join only through payment quota.

Yeah, during my higher secondary examination result the mark was not bad and I scored 81% in the public examination. But the biggest hurdle is the entrance exam where everybody has to face it. I went to special coaching class for the entrance exam for one month and after one month preparation I wrote the exam. I too had the dream of joining in professional course, but on the day of entrance exam result, the mark scored was not sufficient for me to get admission in the engineering college.

My dad mad mom found it difficult to get admission in the payment quota, so they decided to seek admission in science courses. At first I am not convinced with their decision, but my mom said me that there is nothing superior in courses. It is all about learning; and she advised me to have graduation in science course and to do the best in it. Finally I got admission for the Physics course in the arts and Science College. My life changed there and completed my under and post graduate in physics stream. Today I am assistant professor in engineering college and completed my doctorate in physics. Now teaching engineering students every year gives me satisfaction and this profession is a passion for me.
